This no bake Strawberry Tiramisu is a fruity twist on the classic Italian dessert. Made with layers of soft ladyfingers soaked in homemade strawberry purée, a lightly sweetened mascarpone cream, and loads of fresh strawberries. It’s light, fresh, and an absolutely perfect spring and summer dessert.

My wife and I recently celebrated our 7-year anniversary at a Phoenix restaurant called Tratto. If you’re local (or visiting), I can’t recommend it enough. Especially the Cacio e Pepe, I literally almost ordered a second serving. For dessert, we tried a strawberry tiramisu that completely blew me away. Their menu rotates often, so I can’t just go back and order it again, which is exactly why I recreated it at home.

This homemade version is light, fruity, and perfect for summer. It skips the coffee and cocoa in favor of sweet strawberry flavor, and best of all, it’s no-bake. Below you’ll find everything you need to make this refreshing take on tiramisu from scratch.

Key Tips Before You Make

1) Let the Marscarpone come to room temp before mixing. When cold it can be a little too hard
2) Dont over-soak the lady fingers, They should be soft but not soggy. A quick dip works perfect
3) Use ripe sweet strawberries for the best flavor. Any extra can be used to make Strawberry Simple Syrup

Ingredients

  • 1 Pound Fresh Strawberries
  • 1/4 Cup Sugar (+2 TBSP for the syrup)
  • 2 TBSP Lemon Juice
  • 2 Cups Mascarpone Cheese Softened
  • 1 1/2 Cups Heavy Whipping Cream
  • 1 Cup Powdered Sugar
  • 1 tsp Vanilla Extract
  • 24-30 Lady Fingers Savoiardi
  • 1/2 Cup Water

Instructions 

Stawberry Syrup

  • In a small saucepan, Combine 1 cup of sliced strawberries, 2 TBSP sugar, Lemon juice, and water. Bring to simmer and cook for 5 minutes until the berries are soft.
  • Remove the saucepan from the heat and blend into a puree. Set aside and let cool to room temperature. You will use this to soak your lady fingers

Tiramisu

  • In a large mixing bowl, beat the heavy cream until soft peaks form, Add the powdered sugar and vanilla extract. Beat until stiff peaks form.
  • In another bowl, stir the mascarpone to loosen it. Then gently fold in the whipped cream until it is smooth, creamy, and uniformly mixed.
  • Quickly dip each lady finger into the cooled strawberry syrup. (dont soak too long or they will fall apart and be soggy) Then Layer in a 9×9-inch dish or similar container
  • Spread half the mascarpone cream over the lady fingers, spreading the top. Add a layer of sliced strawberries over the cream.
  • Repeat with another layer of ladyfingers, Mascarpone cream, and strawberries
  • Cool in the fridge for at least 4 hours or overnight. ENJOY!

Notes

For extra strawberry flavor, add a bit of strawberry liqueur to the syrup.
Chill the whipped cream bowl and beaters before whipping for best results.
Place the mascarpone into a piping bag and pipe over the ladyfingers.
Make it in individual cups or jars for a fun presentation.
Strain the strawberry purée if you want a smoother syrup.
Save the extra puree to pour over each serving if desired.
Add a thin layer of strawberry jam for a boost of fruity sweetness.
Decorate the tiramisu with sliced strawberries and mint leaves.
Garnish just before serving to keep the top looking fresh.
Leftovers keep well for up to 2 days in the fridge, but the ladyfingers may soften further over time.
