In a small saucepan, Combine 1 cup of sliced strawberries, 2 TBSP sugar, Lemon juice, and water. Bring to simmer and cook for 5 minutes until the berries are soft.
Remove the saucepan from the heat and blend into a puree. Set aside and let cool to room temperature. You will use this to soak your lady fingers
Tiramisu
In a large mixing bowl, beat the heavy cream until soft peaks form, Add the powdered sugar and vanilla extract. Beat until stiff peaks form.
In another bowl, stir the mascarpone to loosen it. Then gently fold in the whipped cream until it is smooth, creamy, and uniformly mixed.
Quickly dip each lady finger into the cooled strawberry syrup. (dont soak too long or they will fall apart and be soggy) Then Layer in a 9x9-inch dish or similar container
Spread half the mascarpone cream over the lady fingers, spreading the top. Add a layer of sliced strawberries over the cream.
Repeat with another layer of ladyfingers, Mascarpone cream, and strawberries
Cool in the fridge for at least 4 hours or overnight. ENJOY!
