Pulled Pork Bruschetta with Caramelized Onions and Mozzarella
Thick slices of bread are topped with pulled pork, sweet and tangy barbecue sauce, caramelized onions, and melted cheese, for an incredible hearty appetizer!
These are the summer bbq days when we all may have a little bit of pulled pork leftover in the fridge, and are scrambling for new ways to use it up before it gets old. I think I’ve succeeded in turning these leftovers into something special.
I pile pulled pork on garlic rubbed toasted bread and top it with caramelized onions and mozzarella cheese. It’s a beautiful mess.
Pulled Pork Bruschetta with Caramelized Onions and Mozzarella
Ingredients
- 1 large yellow onion sliced
- 1 tbsp olive oil
- 4 large slices bread
- 2 cups pulled pork
- 1 cup mozzarella cheese
- a couple cloves of garlic
Instructions
- Heat up the widest skillet you have over medium low heat, and add the olive oil and sliced onions. Cook for 20 minutes, stirring occasionally, until the onions have caramelized. If at any point the onions are browning instead of turning translucent, turn the heat down slightly.
- Toast the bread by placing the slices on a sheet pan and sticking them under the broiler for a minute or so on each side. Don’t walk away from it, it burns quickly! Remove the bread from the oven and preheat the oven to 350 degrees F. Rub the bread with the garlic cloves.
- Pile on a 1/4 cup or so of the pulled pork, then add about a tablespoon of the caramelized onions. Sprinkle with mozzarella cheese, and pop it into the oven until the cheese has melted. Enjoy!

Super recipe to make the leftovers really transform into something really fantastic. Having that talent is a great asset, especially since I know of someone’s husband that refuses to eat leftovers. Leftovers in this recipe can easily be kept a secret. Yum!
