Iceberg Wedge with Crumbled Bacon and Gorgonzola
Thick-cut wedges of crisp iceberg lettuce are topped with an easy creamy dressing, crumbled bacon, and gorgonzola. It’s an easy salad to serve with any dinner!
Poor little iceberg lettuce doesn’t have a very good reputation. I’ve read time and time again about how it has the least amount of vitamins and the highest water content out of any lettuce. But honestly, I’m in love with iceberg wedges mainly for how refreshing they are to eat. If you’ve only ever had a torn iceberg salad, you must try this, because the two are not the same at all. There’s something so satisfying about cutting off a big stack of layered iceberg leaves off a big wedge with a fork and knife, and eating it. Now, crumbled bacon and gorgonzola are classic flavors for an iceberg wedge, but you could do some variation by doing a blue cheese instead. Play with it however you like!
Iceberg Wedge with Crumbled Bacon and Gorgonzola
Ingredients
- 3 tbsp mayonnaise
- 3 tbsp plain yogurt or whole buttermilk
- salt and pepper
- 2 oz crumbled gorgonzola divided
- 8 slices of bacon cooked until crisp
- 1 head of iceberg lettuce
- 1/2 cup chopped red or green onion
Instructions
- To make the dressing, whisk together the mayo and the yogurt, and season generously with salt and pepper. Add half of the crumbled gorgonzola to it.
- Cut the iceberg wedge into quarters, then drizzle the dressing over each wedge. Chop up the bacon with a sharp knife. Sprinkle on the chopped bacon, the remaining crumbled gorgonzola, and red onion. That’s it! Serve and enjoy.

Ok…almost ten years in since this was posted…. I bought a little tub of crumbled Gorgonzola not knowing what to do with it so I searched the internet and found this recipe. WOW! I thought the dressing would be bland with only yogurt and mayo and some cheese, WRONG! Omg this is sooooo good! New go to. Love love love! I know it’s bad to change the recipe as written but all I did was add diced tomato for color. Will make again and again.
I don’t know why. I like an iceberg salad and I usually prepare mine like you just did. Great mings think alike.
You’re right- iceberg has no nutritional value but sometimes it’s so refreshing! Especially on a hot summer day. Love it with gorgonzola instead of “moldy cheese” I call it. 🙂 Hehe.

This is one of my fav salads though I never make it at home. Looks absolutely beautiful!
Problem is that it’s not as tasty as other lettuce however in South Africa it is the cheapest version to buy, So I have bought quite a few recently as we are going into summer so I’ve increased my fruit and veg intake 🙂

I love using iceberg lettuce leaves as wraps…especially the larger outer leaves! And when it’s that time of the season when iceberg lettuce is sweet instead of slightly bitter, there’s no greenery to beat this underrated gem.

Yum! I like iceburg…there are times no other lettuce will do. However, for most salads, I go with romaine or artisanal lettuces.
