Mint Chip Gelato Ice Cream Sandwiches
Homemade mint chip gelato is sandwiched between two chocolate rocky road cookies for a creamy and indulgent dessert!
Now THIS is an ice cream sandwich.
Errr, a gelato sandwich.
Doesn’t have quite the same ring to it, but I promise it’s worth changing it up to gelato.
Why?
Because I think mint chocolate chip is much more suited to the consistency of gelato.
It tastes very light and refreshing (gelato has a lower cream content than ice cream).
Make your ice cream liquid by cooking together cream, milk, egg yolks, sugar, and peppermint extract.
Strain the mixture and pour into your ice cream maker to spin:
Scrape the mixture into a container and freeze completely.
To assemble the sandwiches, place a scoop of gelato between the two cookies and press together to form a sandwich. Enjoy!
Gelato Mint Chip Sandwiches
Ingredients
- 1 cup heavy cream
- 2 cups milk
- 4 egg yolks
- 1/2 cup sugar
- 1.5 tsp peppermint extract
- 1/3 cup mini chocolate chips
- 1/2 batch rocky road cookies, no marshmallows added
Instructions
- Place the heavy cream and milk together in a saucepan set over medium high heat, and heat it up until you see bubbles around the edge (you’re scalding the mixture). Be careful not to let it boil. Remove the mixture from the heat.
- Whisk together the egg yolks and sugar until the mixture gets thick and light yellow in color. Slowly add in the cream mixture while constantly whisking, then return all of the liquid to the saucepan, and cook over medium heat until the mixture thickens slightly and coats the back of a wooden spoon (if you have a thermometer, heat it to 165). Add the peppermint extract to the mixture.
- Strain the mixture, then cool it completely either by placing it in the fridge, or for a speedy method, placing it in a bowl set in an ice bath. When completely cold, pour the mixture into your ice cream maker along with the chocolate chips, and spin until frozen.
- Place the mixture into a container and freeze completely.
- To assemble the sandwiches, place a scoop of gelato between the two cookies and press together to form a sandwich. Enjoy!

This looks incredible. I was instantly salivating the moment I saw the photo. The gelato and cookies look picture perfect as I’m sure the flavor is as well. Thank you for sharing this. I’m printing these off now to make. When I was younger I didn’t like mint chip either now I love it. Maybe it’s just something you grow into or develop as your palate becomes more sophisticated.
