Food processor instructions: Using the shredding blade, shred the cheddar cheese.
Leave the cheddar in the food processor container, but switch to the standard processing blade. Add the cream cheese, sliced chives, ground chipotle, and cayenne pepper.
Process the ingredients until everything is combined, about 1 minute. You may need to stop to scrape down the sides if the ingredients clump too much.
Scrape the mixture on to a piece of plastic wrap and use the plastic to shape the cheese into a ball. Refrigerate for one hour until firm.
When ready to serve, place the everything bagel mix on a plate, unwrap the cheese ball, and roll to coat the outside. Serve with crackers, and enjoy!
No food processor? Shred the cheese using a handheld shredder, and combine everything else with a hand mixer, or by hand with a wooden spoon. Place the mixture on the plastic wrap and continue as directed above.

*Scallions are also great, if you prefer to use those instead of chives. It's a little bit stronger.
