This Kiwi Ice is a refreshing treat for a hot summer day, and very easy to make. As the fluffy ice crystals melt, they give tons of bright fresh kiwi flavor.
Ingredients
4kiwis
1/4cupsugarmay need to be adjusted depending on sweetness of kiwis
2tbsphoney
1tbsplemon juice
1cupwater
Instructions
Slice each kiwi in half and use a spoon to dig the flesh out of each kiwi. Place the kiwi flesh in a food processor, and add the rest of the ingredients. Pulse until smooth.
Pour the liquid into a 9×13 baking dish (or even a sheet pan if you can get it into your freezer) and place it in the freezer. Every 15-30 minutes, use a fork to break up the ice crystals and fluff the ice. It should take about 2 hours for the mixture to freeze completely. Once frozen, serve in dishes and enjoy!
