This fluffy and delicious Cilantro Lime Cauliflower Rice has SUCH incredible flavor, and is the perfect side dish for many types of meals, especially Mexican themed dinners. It's healthy, light, and takes less than 15 minutes to make.
Heat the oil in a large skillet set over medium high heat, then add the garlic, scallions, and jalapeno. Season with 1/4 tsp sea salt.
Cook for about 3 minutes, stirring frequently, until slightly softened.
Add the cauliflower rice and cook, stirring frequently for about 5-8 minutes, until the rice is soft and has lost its raw taste, but isn't mushy or overcooked. You want the heat high enough that any water being cooked out of the rice evaporates quickly. If you see any water pooling in the pan, turn the heat higher.
Once the cauliflower rice is cooked, turn the heat off and add the cilantro, lime juice, and 1/4 to 1/2 tsp of sea salt, to taste. Adjust any seasoning as desired (perhaps you'd like more lime juice, or more salt).
Serve immediately and enjoy.
Leftovers will keep in the fridge for 3-4 days.

*If making your own cauliflower rice, a 2 to 2.5lb head of cauliflower will give you about 6 cups. Here's How to Make Cauliflower Rice.** The lime juice is to taste. It depends how sour/bright you like your food. Remember that adding acidity will make the food taste less salty, so you may need to add more salt.
