Toasted slices of bread are rubbed with garlic and topped with a white bean puree, basil, and peppery radish slices for a simple hors d'ouerve!
Ingredients
12slicesof baguette
15ozcan cannellini beansdrained and rinsed
2tbspolive oil
1tbsplemon juice
1/4tspground cumin
salt
pepper
3-4small red radishes
1garlic clove
fresh basil leaves
extra virgin olive oilfor drizzling
Instructions
Start by toasting the bread slices. You can either pop them in the toaster, or toast them in the oven. Browning time in the oven will depend on how fresh your bread is, but start with a 400F oven for 10 minutes.
In a food processor or blender, add the beans, olive oil, lemon juice, cumin, and a pinch of salt and pepper. Pulse until the beans are pureed, and have a creamy smooth texture.
Using a mandolin, slice up the radishes into thin disks. I use the “super thin slices” setting on my mandolin.
To assemble the crostini, cut the garlic clove in half and rub the bread slices with the garlic clove. Next, spread a spoonful of the pureed white beans onto each toast. Add 3-4 slices of sliced radish, and add a leaf of basil. Sprinkle with salt and pepper, then drizzle on some olive oil to finish it off. Serve and enjoy!
