I have made this salad over, and over, and over again this summer. You could say I’m a little obsessed.

And by ‘I’m a little obsessed,’ I’m talking about this salad and about zucchini in general. Zucchini has always been one of my favorite vegetables and there are endless ways to eat it. Zucchini Fritterspesto zucchini rollups, and now this salad comes in to round out my top 3 favorite zucchini recipes.

It’s great as a side dish, but sometimes I even make a meal of it by adding some Grilled Chicken Breast
on top.

The preparation of this zucchini is raw, and if your reaction is to run away, I totally get it. I’m generally not a fan of raw vegetables and certainly can’t eat big hunks of raw zucchini, but grating it with a mandolin…oh, the texture and flavor are heavenly.

Once you’ve grated the zucchini with a mandolin, combine it with feta cheese crumbles, sliced scallions, and some fresh chopped parsley:

Add in some good olive oil (I LOVE this one):

Then add a good balsamic (I use a 15 year aged balsamic of Modena):

Toss it together with a pinch of salt and pepper:

Now add a big handful of fresh arugula:

Ingredients

  • 1 large zucchini
  • 1/2 cup feta crumbles
  • 1/4 cup chopped parsley
  • 2 scallions sliced
  • 2 tbsp good quality olive oil
  • 1 tbsp good quality aged balsamic vinegar
  • salt and pepper
  • 2.5 oz arugula

Instructions 

  • Grate the zucchini with a mandolin, and combine with the feta, parsley, scallions, olive oil, and balsamic in a large bowl. Season to taste with a pinch or so of salt and pepper.
  • Add the arugula and toss to combine. Serve and enjoy!
