Penne with Mushrooms, Chicken and Sun-Dried Tomatoes
The first time I ate mushrooms, chicken, and sun-dried tomatoes together in pasta, my first thought was, “I didn’t know you guys were best friends!!!” Really though, it’s amazing when you taste a combination of ingredients that’s so perfect together that you want to eat it again and again.
In high school, I worked as an appetizer and salad cook at a small restaurant in town, and they had a pasta dish on the menu called Penne Rustica. Can you guess what it had in it? Penne, mushrooms, chicken, sun-dried tomatoes … oh wait, this is sounding familiar. This recipe is totally inspired by that dish. High school was a long time ago but I remember trying it and falling in love with the flavors.
Aside from tasting good, which is always the first requirement for any recipe, this recipe is super quick to make, and fits into a “dinner tonight” situation. With just my husband Pete and I around, we have plenty of leftovers for the next few days, which is a bonus as well. Let me show you how to make it.
