Miso Cucumber Sticks
Miso Cucumber Sticks make for a quick, healthy, and delicious snack. Just combine miso paste, soy sauce, honey, and vinegar, and marinate!
For the longest time, I thought I didn’t like miso. I remember dining out at a sushi restaurant a few times and getting served a little bowl of miso soup, and I just wasn’t crazy about it. So my conclusion? That I didn’t like miso.
This all changed when I tried my friend Brenda’s Miso-Butter Grilled Veggies on a trip to Minnesota last June. I was CRAZY for those vegetables. They had so much flavor and I remember going back for seconds and thirds. Now I’ve got a big tub of miso in my fridge, and I make her recipe using oven roasted vegetables. I’m such a fan!
Now that I’ve got miso as a staple in my fridge, I’ve been playing around with it more. These Miso Cucumber Sticks are one of my favorite snacks to make with it.
All you do is mix together miso paste, soy sauce, rice vinegar, and honey:
Then cut a seedless cucumber into sticks:
Then pour the dressing all over:
Let them sit for 20 minutes, then it’s crunch and munch time. Enjoy!
Miso Cucumber Sticks
Ingredients
- 1 large English cucumber
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp miso paste
- 1 tbsp honey
Instructions
- Cut the cucumber into sticks about 4 inches in length, then place in a dish.
- Mix together the soy sauce, vinegar, miso, and honey. Pour all over the cucumber sticks, then place in the refrigerator for 20 minutes. Serve and enjoy!
