Juice. Coffee. Tea. Wine. Beer. Cocktails.

I’ve only named a few of the drinks that are out there for human enjoyment.

Yet it’s very rare that I drink anything other than water or milk.

I know, my friends make fun of me. But I just don’t enjoy drinks a whole lot. There are only so many calories available in a day, and I like to chew those calories rather than drink them. I mean, come on…two bites of cake vs. a glass of wine…I’ll take the cake every time.

But there is an exception to my rule, and it’s lemonade in the summertime. I know it’s only April, but when you live in Florida, summer starts much earlier…it’s HOT!

Lemons on Cutting Board Sliced in Half

Nowadays I’m always craving something refreshing, ice cold, and light. You’d think the tart freshness of lemons would be enough, but no, it needs something else…and that special something is mint! Sipping (and/or gulping) mint muddled lemonade is pure bliss.

To start, crush the mint leaves to release their fresh flavor.

Then add your freshly squeezed lemonade and let it steep for 15 minutes so the mint and lemons can make friends.

Remove the mint leaves once they’ve fulfilled their destiny (well, you could leave them in, but they’re kind of ugly now that they’ve been crushed), and add some ice, lemon wedges, and a couple fresh mint leaves for garnish.

Ingredients

  • 1/4 cup freshly squeezed lemon juice
  • 1/2 cup cold filtered water
  • 4 tbsp simple syrup*
  • ice
  • 2 tbsp packed mint leaves + more for garnish

Instructions

  • Place the mint in the bottom of a glass or pitcher. Use a muddler or stiff kitchen tool to crush up the mint leaves and release their flavor.
  • Add the lemon juice, water, and syrup.
  • Let it steep for 15 minutes, then taste to make sure it has enough minty flavor for your tastes. If it does, remove the mint, then add additional fresh mint leaves for garnish. If you want more mint flavor, add another set of muddled mint.
  • Serve over ice and enjoy!

Notes

*Simple syrup is just equal parts sugar and water. Microwave it and stir until the sugar dissolves, then chill in the refrigerator.
