How to Roast a Chicken
Lots of people say that the first thing you should learn how to do when you’re a beginner cook is roast a chicken. One quick search on the internet and you’ll see there are about 1,000 different ways to make a roast chicken! How do you know which method to choose?
I’m convinced that the way you roast a chicken is a personal thing, but having tried quite a few methods myself, the one I’m going to share with you today is my favorite. It’s a general method I learned from a cookbook my brother got me for Christmas many years ago, Thomas Keller’s Ad Hoc At Home, and it has been my go-to method for years. It’s got a hot start, then finishes cooking at a lower temperature. Plus, the bed of vegetables underneath the chicken soaks up all the chicken deliciousness as it cooks. It’s my hero roast chicken!
