YAY!!!!  It has been one year since my first post here at Fifteen Spatulas, and I can’t believe a year has already gone by!  When I first started the blog, I had no idea what I was doing or what I wanted from the experience.  But I had just decided not to work for a finance company downtown, and to pursue my passion in food instead, and the blog was the first step towards that.  That’s why it always has and always will hold a special spot in my heart!  It has been so much fun posting my scrapeworthy recipes here, and I want to thank all of you SO much for reading and making my recipes.  I love hearing from you all and I’ve enjoyed becoming “foodie friends” with so many of you.  And goodness, I’ve come a long way from when I started…the photography, the recipes, the food styling…all of it!  To celebrate, I baked my beloved blog a cake…well, cupcakes.  I did chocolate cupcakes with an Amaretto Fluff Buttercream (and yes, I made a wish, and my friend Leah and I actually sang it happy birthday).

Amaretto Fluff Buttercream

 This simple buttercream has the most luscious texture, with butter, cream cheese, and marshmallow cream whipped together until light and fluffy, and flavored with amaretto. It goes well with both vanilla and chocolate cupcakes!

Ingredients

  • 1 cup unsalted butter at room temperature
  • 4 oz cream cheese at room temperature
  • 1.25 cups confectioner's sugar or to taste
  • 3 tbsp amaretto
  • 1/2 cup marshmallow cream

Instructions 

  • Beat all ingredients together until combined, fluffy, and light.  Pipe onto cooled cupcakes (and if frosting is too runny, refrigerate it to firm it up).
