Chocolate Cherry Cheddar Truffles

Cheddar goes sweet for these Chocolate Cherry Cheddar Truffles, one of my favorite bites for the holidays!

The best foods on earth happen when sweet and savory collide.

At first glance these Chocolate Cherry Cheddar Truffles might seem like a strange concept. But dare I say these little truffles are way more interesting and delicious than a regular chocolate truffle. Here we have cheddar cheese inside, combined with chopped dried cherries, rolled in a white chocolate shell and crunchy chocolate wafer crumbs. The textures and flavors together are out of this world.

The reason why these truffles work so well is because Cracker Barrel’s cheeses all have great creaminess and sharpness to them. I discovered last week that they add cream during their cheese making and aging process, which is what gives it such an ethereally smooth texture and wonderful flavor. Traditional chocolate truffles are made by adding cream to chocolate, so the creaminess of the cheese fits the bill well.

For this particular recipe, I highly recommend using Cracker Barrel’s Aged Reserve cheddar because it has a special affinity for sweetness and has extra complexity in its flavor.

To get started, use a fine grater to grate some Aged Reserve cheddar:

Next, chop up some dried cherries:

Combine the cheese and cherries in a bowl, and toss to combine with your fingertips:

Grab a small clump of cheese and cherries:

And shape it into a small ball, rolling it around in the palms of your hands:

It should be really firm and tightly packed:

Dip the ball into some melted white chocolate:

Then roll it in some crushed chocolate wafer crumbs:

Pop the truffles into the fridge to let the white chocolate harden into a shell, then use a fork to drizzle the tops with some extra white chocolate:

And that’s it! You’ve got a really easy and festive Chocolate Cherry Cheese Truffle! These are great to serve during holiday parties as an hors d’ouerve or on a cheese plate. They can be made ahead of time, so all you have to do is take them out of the fridge and serve. This is also a really fun recipe for kids to make. Enjoy!
