Some ears of corn are so good that it would be a disservice to put ANYTHING on it.  I had some last week that was unbelievably sweet and plump, so when I saw some again at the store the other day, I snatched them up.  I got home and shucked the corn, threw them in a pot of boiling water, and stared down into the rolling bubble….mmmm….cook faster!  After five minutes I drained them, took that first bite and…!!!!!!!!!

Unnnnnghhhh.  It sucks.  It tastes like nothing.  Those little buggers were plucked from the Earth before they were ready.

Ingredients

  • 4 ears corn on the cob
  • 2 tbsp butter
  • 1/8 tsp chipotle chile pepper ground
  • 1/8 tsp cayenne pepper
  • 1 tbsp lime juice
  • zest of 1 lime finely minced
  • salt and pepper

Instructions 

  • To cook your corn, you can either grill it, steam it, or you can cook with my desired method, simply boiling it for about 5 minutes in salted water (shuck the corn first).
  • While your corn boils, melt the butter and whisk in all the other ingredients to combine. Brush it over the corn while it is hot. Mmm….much better.
