Summertime is for Picnics

Now that it’s FINALLY relatively warm in New England, Pete and I have been out of the house as much as possible. After living in Florida for 2 and a half years, I had completely forgotten how long winters last in the northeast. May in Florida? Everyone is hot and sweaty and fighting over who gets to stand in front of the a/c. May in the Northeast? It’s still in the 50s and 60s, and you can see a few adamant teenage girls still wearing furry boots. I definitely had a tough time getting used to the cold Northeast winters again!

Thank goodness it’s June and I can finally wear a sundress, pack a picnic, and head outside.

Even when Pete and I don’t feel like planning a trip and driving somewhere, we’ll just pack a little lunch, head to the beach that’s five minutes from our house, and read. It may be low-key, but something about packing up a picnic and being outside relaxing together still feels plenty special! If you haven’t gone for a picnic recently, here’s a little inspiration. These are my top 10 favorite foods to pack into my picnic basket:

From left to right, top to bottom:

  1. Fresh Spring Rolls with Peanut Dipping Sauce
  2. Shrimp and Cucumber Sesame Noodles
  3. Caprese Pasta Salad
  4. Asparagus Coin and Chickpea Salad
  5. Cranberry Chicken Salad
  6. Puffed Jalapeno Cheddar Crackers
  7. Herb Lemon White Bean Salad
  8. Crisp Asian Broccoli Salad
  9. Tomato Cucumber Barley Salad
  10. Fresh Corn and Avocado Bean Salad

If I don’t have time to make a recipe, sometimes I throw a few of these Cracker Barrel Extra Sharp Cheddar bars in my bag along with some dried fruit and nuts.

CrackerBarrelBars

They’re 60 calories a pop and I can just unwrap and nibble wherever I am, whether I’m on a hike through the woods or have my toes in the sand at the beach (preferably it’s always the latter).

CrackerBarrelCheddarBar

This little bar has the same rich, full flavor that all the other Cracker Barrel cheeses do, and it’s super portable.
