Mango Cilantro Chicken

One of my goals for 2014 is to focus on nourishing my body with better food, but making sure that food still has a ton of flavor. If there’s one thing I’m terrible at, it’s restrictive diets where you can only eat bland food. It’s totally not worth it!

This Mango Cilantro Chicken is one of my favorite new chicken recipes, and it’s pretty light on calories but has a ton of exotic flavors. Boneless skinless chicken breasts are marinated in pureed mango, cilantro, red onion, coconut milk, ginger, Truvia® natural sweetener, and other ingredients, and grilled until the outer edges caramelize. It’s so good!

    I am a total beg due to health reasons. (I had most of my stomach removed due to health issues in 1996 and cannot digest meat or poultry and am allergic to fish and shell fish. Thought this recipe would be great for my hubby who constantly worries about adding 5 lbs! (I wish!) This was great! He had no idea that it was “diet” and I love Truvia – my go to when I want to splurge and go “crazy!”. This was awesome and for those who swear off anything that isn’t “real” – too bad this works to fake them out and keep them healthy! Just don’t tell them! Love IT!
