Chocolate Cherry Cheddar Truffles

ChocolateCheeseBallsFifteenSpatulas

The best foods on earth happen when sweet and savory collide.

At first glance these Chocolate Cherry Cheddar Truffles might seem like a strange concept. But dare I say these little truffles are way more interesting and delicious than a regular chocolate truffle. Here we have cheddar cheese inside, combined with chopped dried cherries, rolled in a white chocolate shell and crunchy chocolate wafer crumbs. The textures and flavors together are out of this world.

The reason why these truffles work so well is because Cracker Barrel’s cheeses all have great creaminess and sharpness to them. I discovered last week that they add cream during their cheese making and aging process, which is what gives it such an ethereally smooth texture and wonderful flavor. Traditional chocolate truffles are made by adding cream to chocolate, so the creaminess of the cheese fits the bill well.

For this particular recipe, I highly recommend using Cracker Barrel’s Aged Reserve cheddar because it has a special affinity for sweetness and has extra complexity in its flavor.

Pop the truffles into the fridge to let the white chocolate harden into a shell, then use a fork to drizzle the tops with some extra white chocolate:

And that’s it! You’ve got a really easy and festive Chocolate Cherry Cheese Truffle! These are great to serve during holiday parties as an hors d’ouerve or on a cheese plate. They can be made ahead of time, so all you have to do is take them out of the fridge and serve. This is also a really fun recipe for kids to make. Enjoy!

Chocolate Cherry Cheddar Truffles

Ingredients:

  • 8 oz block Cracker Barrel Aged Reserve Cheddar Cheese
  • 1/4 cup dried cherries, chopped
  • 1 cup chopped white chocolate, melted (make sure you’re using real white chocolate, not white morsels)
  • 2 cups chocolate wafer crumbs (homemade or storebought)

Directions:

  1. Using a fine grater, grate the entire block of Cracker Barrel Aged Reserve and mix in the chopped dried cherries, combining them by tossing it all around with your fingertips. Take small spoonfuls of the cheese cherry mixture and shape it into a ball, rolling it in the palms of your hands. Roll the cheese ball in the white chocolate, then roll in the chocolate wafer crumbs. Refrigerate the cheese balls to harden up the white chocolate to a hard shell. Drizzle the tops with extra white chocolate, if desired. Serve and enjoy!
