This Cheesecake Stuffed Strawberries recipe is perfect for parties. It’s simple to make, and has the perfect balance of fresh strawberry and creamy cheesecake filling.

If you get a cheesecake craving but don’t want to go through all the work of actually making a cheesecake, this is the recipe for you.

You can think of this dessert as like cheesecake filling stuffed into a fresh strawberry.

They actually remind me of that really popular party dip that’s made with cream cheese and marshmallow fluff and served with fruit for dipping, but more thick like a traditional cheesecake.

The flavors work so well together, it almost feels unfair how delicious they are when they take such little work to make. They’re kind of like classic Chocolate Covered Strawberries, in that sense.

There are also quite a few ways to dress them up.

You can serve them with blueberries to make a Red, White, and Blue theme for July 4th or other patriotic holidays, or you can sprinkle on graham cracker crumbs for an even more cheesecake-like experience.

Chocolate is also fantastic if you want to drizzle it over, or dip the strawberries entirely.

The point is, there are so many ways to change up this easy dessert, and it’s fantastic any time of year, and for many occasions. It’s especially glorious during strawberry season when extra juicy strawberries are well stocked at the grocery store.

Step by Step Overview:

First you need to hollow out the inside of the strawberry to make room for the creamy filling. I like to use a melon baller for this task, but you may use a strawberry huller if you have one:

You’ll also notice that I like to cut the bottom tip off with a small paring knife to create a flat surface for the strawberries to stand up, but you can also just lay the fresh berries on their side if you prefer.

The filling is thick enough that it won’t fall out.

Next, whip together cream cheese, confectioner’s sugar (aka powdered sugar), and vanilla extract in a mixing bowl using a hand mixer. Then put it into a piping bag.

Then pipe the cheesecake filling into each strawberry:

To get the twist shape to happen, fit a star tip (this is the piping set I have) into the pastry bag and keep rotating the strawberry around and around as you pipe the filling out.

But really, if you’ve got a piping bag and tip, it’s hard to make these look bad.

Topping Options

I love a cleaner look, and seeing the twist of the cream cheese mixture. But if you wish to add a final topping, you have many options!

Graham crackers – To further the cheesecake theme, you can crush graham crackers finely, then sprinkle the graham cracker crumbs over the tops.

Blueberries– Adding a blueberry on top is a great way to make it red, white, and blue for patriotic holidays like July 4th.

Cookie crumbs – Crush vanilla wafers or even oreos, then sprinkle on top.

Chocolate – Dot the filling with mini chocolate chips, either white or dark.

Serving Suggestions

This no bake treat is great for occasions like a baby shower, Valentine’s Day, Mother’s day, or even for bridal showers. Because it’s a light and fresh recipe, it’s one of my favorite desserts for events like that. They have no problem sitting out on a plater on the table, allowing people to graze as they wish.

Recipe Variations

I recommend trying this recipe once as written, then you can experiment further and go from there.

Citrus – Adding some citrus zest to the filling gives a wonderful aroma and flavor to the no bake cheesecake filling. Try adding 1 teaspoon of lemon zest or orange zest before whipping.

Extracts – Feel free to swap out the vanilla for other types of extract, like lemon, orange, or almond.

Sour cream – To make the filling a little more tangy, add 1/4 cup sour cream or Greek yogurt to the filling.

Cheesecake Stuffed Strawberries

Fresh strawberries are filled with a simple cheesecake filling for this easy party dessert!

Ingredients

  • 1 lb package fresh strawberries
  • 8 oz cream cheese at room temperature
  • 1/4 cup confectioner’s sugar
  • 1/2 tsp vanilla extract
  • blueberries or graham cracker crumbs optional

Instructions 

  • Remove the stems from the strawberries, then use a melon baller to scoop out a hole in the top of each strawberry.
  • Cut a small part of the bottom of each strawberry with a sharp knife to create a flat surface for them to stand on. 
  • Using a hand mixer, mix together the cream cheese, confectioner’s sugar, and vanilla extract, until fluffy and light.
  • Transfer the cream cheese mixture to a piping bag lined with a star tip, and pipe the filling into each of the prepped strawberries.
  • Top each cream cheese pile with a blueberry or with graham cracker crumbs, if desired. Serve and enjoy!
